Pizza of the Month: Artichoke

Our Artichoke pizza is a really special flavor for us, because it celebrates the vegetable that is a really integral piece of Italian culture. Not to mention that it's also one the favorites of nearly everyone on the Talia team!

Artichokes and Italy

Artichokes originated from southern Italy and are one of the oldest cultivated vegetables in the world. What does this mean? It means that Italians have been working this vegetable into their cuisines far longer than anything else. One can often see these piled high at Italian markets from December through May, when they're in season. In the months when the artichoke is not in season, Italians typically omit this from their diets. Fresh artichokes grown it Italy are the best, and so incorporating preserved, imported, or off-season artichokes into dishes is not common.

Our Artichoke Pizza Recipe

We, of course, source our artichokes in Italy when they are in season. Instead of simply placing artichokes on top of our pizza, we created an entirely new pizza recipe that exists solely to highlight the artichoke. We took our fresh artichoke chunks and sautéed them in cream, garlic, and spices. The cream thickens into a creamy sauce, laden with pieces of artichoke, and this entire thing is used as the base for the pizza. We add this base and our signature Fior di Latte mozzarella to our sourdough crust and end up with a rich, delicious homage to one of the world's oldest grown vegetables!
